"RECIPE OF THE WEEK"

Just so everyone knows, my recipes usually won't be time consuming. Besides low in carbs, I strive for quick and easy. Taking classes, working and doing everything else I like to do takes time, so I try to plan ahead and make meals that are healthy and easy to prepare. So here we go with week one.


MIDDLE EASTERN CHICKEN THIGHS WITH PEPPERS AND ONIONS

Ingredients.

½ cup reduced-sodium chicken broth 2 teaspoons extra virgin olive oil
1 ½ teaspoons grated lemon zest 3 TBSP. Lemon juice
2 garlic cloves 1 teaspoon paprika
1 teaspoon ground cumin ½ teaspoon salt
4(5 0z) skinless boneless chicken thighs 2 small red bell peppers seeded and quartered
½ cup sliced onions ¼ cup chopped fresh parsley

Preheat the broiler. Line a broiler rack with foil, then spray with non stick spray.
Combine broth, oil, lemon zest, lemon juice, garlic, paprika, cumin, and salt in large bowl.
Reserve ¼ cup of mixture.
Add chicken, peppers and onions to bowl and toss to coat.
Place chicken, peppers and onions on broiler pan.
Broil 4 inches from heat, turning once. Takes about 12 minutes to cook.
Transfer to platter, drizzle with reserved broth mixture.
Sprinkle with chopped parsley.

For the lemon zest and lemon juice, I used one fresh lemon, Just use a zester and you have fresh lemon zest and squeeze your lemon for fresh lemon juice.

Per Serving: A serving is 2 chicken thighs and ½ cup of vegetables.
277 calories, 4g Sat Fat, 0g Trans, 88mg Chol, 450 mg sodium, 6 g Carbohydrates, 2 g fiber, 31 g Protein, 57 mg. Calc.

  2. Great start on your blog. I must say your first recipe sounds good! I saw garlic in the recipe and automatically assumed it would be good. Now I need to share this with my family!

    Sorry I forgot to rate it in the last one so I removed it. I would say *** 3 stars as I would like to try this in the future.

  3. Great site, I love the layout! Your style is really indicative of a good cookbook: bright, straightforward, and easy to read.

    My family is in a bit of a carb war at the moment. Our daughter is sensitive to gluten it turns out. We have done some research, but the basics of it include totally eliminating wheat and gluten from one's diet. That is what we have done for her. We have noticed some real improvements. For some people, wheat is actually toxic.

    I will check back again. Great start!
